16. Антимікробні метаболіти молочнокислих бактерій: механізм дії та практичне використання

Короткий огляд
У статті наведено огляд найбільш поширених антимікробних метаболітів молочнокислих бактерій (МКБ) різної хімічної природи: низькомолекулярних (органічних кислот, диацетилу, реутеріну, гідроген пероксиду) і високомолекулярних (бактеріоцинів). Дано характеристику будови та висвітлено механізми дії даних речовин, окреслено сфери їх практичного застосування для потреб людини.
