16. Antibacterial metabolites of lactic acid bacteria: the mechanism of action and practical use

Abstract
This article contains the review of widespread antimicrobial metabolites of lactic acid bacteria (LAB), which have different structures: low- molecular-weight (organic acids, diacetyl, reuterin, hydrogen peroxide) and high-molecular-weight (bacteriocins) compounds. The characteristic of structure is given, the mechanisms these substances action is described and the domains of their use for human purposes are determined.
