18. Study of the influence of the storage life on quality of polycomponent mixtures based on tea and coffee

Abstract
The article deals with a variety of mixtures of extracts of vitamin–mineral complexes, represented at the market of Ukraine and abroad, and analyzes their main disadvantages. We describe the nutritional value and technological advantages of the production of multicomponent mixtures based on dry extracts of tea and coffee, which will also include dry extracts of black chokeberry, cranberry, rosehip and ginger. In order to establish the warranty period of storage of the developed mixtures, two types of packaging material – polyethylene and metallized polypropylene are suggested. The influence of the packaging on change of moisture content and titratable acidity of instant multicomponent mixtures based on tea and coffee for 18 months of storage is studied. Packaged losses of ascorbic acid during storage of mixtures are analyzed. The warranty period for the storage of mixtures of various types of packaging is determined as 12 months from the date of production for blends packaged in plastic wrap, and 16 months – in metallized polypropylene pellicle.
