Main areas of activity:
- Performing of fundamental and applied scientific research work on improving existing and creating new resource- and energy-saving, environmentally safe technologies for processing sugar- and starch-containing raw materials into ethyl alcohol for food and technical purposes, including bioethanol;
- Development of second-generation bioethanol production technologies based on lignin-cellulosic biomass;
- Development of technologies for utilization of plant raw material processing waste for the purpose of using secondary material and energy resources and greening of food industry enterprises.
The department is accredited by the National Accreditation Agency of Ukraine to conduct the following tests:
- determination of amylolytic activity of enzyme preparations;
- determination of the specific starchiness of the grain.
The department provides engineering services in technological processes and technological lines of bioethanol and biogas:
- Technological audit of production and optimization of technological modes of production of ethyl alcohol from sugar- and starch-containing raw materials;
- Development of logistics, technical and economic justification and implementation of bioethanol production technology in the conditions of a sugar factory;
- Development and approval in the prescribed manner of regulatory and technical documentation (on bioethanol production);
- Implementation of the energy-saving technology of fermentation of high-concentration wort from starch-containing raw materials using osmophilic yeast of domestic selection;
- Development of a scheme and laboratory support for techno-chemical control of the bioethanol production process;
- Development of the technological part of the alcohol and bioethanol production project;
- Commissioning and training of production personnel.
- Expertise of projects of foreign companies and their adaptation to the requirements of the National Standards of Ukraine.
The newest scheme for processing starch-containing raw materials into alcohol has been developed, which provides:
- increasing the alcohol content in mature brew to 13.0-13.5% vol. due to the use of an osmophilic yeast strain of own selection in the technological process;
- reduction of natural gas consumption for wort distillation by 92 cubic meters per ton of alcohol;
- increase in alcohol yield by 1.1 dal/t of raw material due to optimization of the nutrient medium, hydrolysis of non-starch polysaccharides of grain and 100% use of stillage filtrate;
- environmentally friendly production due to the maximum utilization of organic production waste.

The technology for obtaining second-generation bioethanol from lignin-cellulosic raw materials has been developed. The technology of joint processing of starch-containing and cellulose-containing raw materials of cereal crops using lignin-cellulosic biomass (straw, stalks, cereal husks) for the production of bioethanol provides:
- reduction of production costs;
- reduction of resource costs;
- increase in alcohol yield, depending on the grain crop, by 1.0-2.5 dal per ton of raw material;
- disposal of bioethanol production waste.
The technology for obtaining bioethanol in the conditions of sugar production has been developed from semi-products of sugar beet processing (diffusion juice and green molasses), enables:
- reducing of energy consumption;
- improvement of the quality of sugar;
- adjustment of the ratio of production of finished products (white sugar and bioethanol) depending on the demand of the consumer market.

As a result of the department's developments, 65 copyright certificates and invention patents were obtained, and more than 150 scientific papers were published.
