Standardization of the production of food products, methods of controlling their quality and safety, in the conditions of the market diversity of goods and their producers, is one of the fundamental prerequisites for the proper provision of adequate nutrition of the population, that is, it realizes an extremely important social function. In this sense, requirements for food products regarding their safety for consumers are of primary importance. Scientifically and technically justified requirements for specialized technological equipment of food industry enterprises are also important in this sense.
Development of regulatory documents
Over the past 10 years, the Department, in close contact with specialists from other scientific departments of the institute, has updated almost the entire main normative base of the meat and dairy industry - qualitatively new national standards have been developed, compliance with which allows enterprises to produce meat and dairy products at the level of the best world samples.
Specialists of the department carry out intensive work on the development and updating of typical technological instructions and guidelines using elements of the HACCP food safety guarantee system, the mandatory implementation of which is determined by the legislation of Ukraine.
During the period of 2001–2023, specialists of the institute developed 336 standards, including 186 national standards of Ukraine, and harmonized 196 international standards for dairy and meat production. Specialists of the department of information support, standardization and metrology carried out scientific and methodological support of the specified developments:
• regarding meat and meat products - 61 standards; regarding methods of monitoring the quality and safety indicators of meat and meat products - 38 standards;
• regarding milk and dairy products – 77 standards, regarding methods of monitoring the quality and safety indicators of milk and dairy products – 162 standards.
