Abstract
Due to the difficult political situation in Ukraine, the wine industry has lost a large number of vineyards and winemaking enterprises, therefore, it is now urgent to search for new varieties of grapes that will yield a high and stable yield, and hence a high quality wine material. In such a situation, the role of potential wine-growing regions and the search for new or rare varieties of grapes yielding high-quality crops serves as a priority task in the further gradual development of viticulture and winemaking, ensuring food security of the country, filling its budget and preserving the health of the nation. Purpose of research was to investigate and determine the antioxidant activity of the less common varieties of red grapes. In the investigation of we used such technical varieties of red grapes like Golubok (Zakarpattia region) and Tempranillo (Mykolaiv region). In the process of study identified the organoleptic and physic-chemical parameters according to which we can conclude that the qualitative indicators of wine materials, the formation of taste and aromatic properties affect the quality of raw materials and production technology. For the research grapes have been used such methods: determination of the sugar content in grape must aerometric method according; definition technology reserve phenolic and dyes; determination of the mass concentration of phenolic compounds is fresh squeezed juice; determining the ability of grape Mazery by insisting on pulp for 4 hours at a temperature of 20-22°C; changes the definition of a phenolic complex in the oxidation of the wort. Investigated grapes determined primarily organoleptic quality of wine material – from the aromas and colors in a bouquet to alcohol, acidity and tannins on the palate.
