Abstract
Deterioration of socio-economic and environmental living conditions, increasing psycho-emotional stress are accompanied by a decrease in the body's overall resistance and, as a consequence, are the cause of a significant increase in diseases that reduce life expectancy. In this direction, the leading role in prevention and treatment can be carried out through targeted modification of animal raw materials, aimed at the production of food with the specified functional or preventive characteristics. The modification can be performed both in vivo and in vitro. The production of biocorrective products requires special approaches to ensure the safety and stable characteristics of the finished product, and therefore the role of direct and inverse traceability of parameters and properties at all stages of the product life cycle. The aim of the system was to substantiate and develop applied aspects of lifelong formation of the given properties of raw meat, forecasting and traceability of meat product production through systematic control of the trophological chain from the field to the consumer. In accordance with the set goal, the following tasks were solved to develop the scientific basis for lifelong formation of qualitative characteristics and special biocorrective properties of the finished product by modifying raw meat for its targeted transformation; - scientifically substantiate the choice of combinations of components for enrichment of feed rations depending on their digestibility by the body of the poultry; - to develop technologies of meat-based products of directed action in accordance with the theory of a single trophological chain. Feeding factors are important among various environmental factors influencing the formation of body tissues of poultry, its physicochemical, organoleptic properties, as well as biological value (35% of total life factors). Aim of study: to scientifically substantiate and develop applied aspects of lifelong formation of functional and technological properties of raw meat using elements of traceability of meat product production by systematic control of the trophological chain from the field to the consumer. Subject of research: technology of production of meat products from poultry meat, created on the basis of raw materials with the set functional and technological properties, which is provided by lifelong modification at the stage of poultry farming. Research results: The algorithm of formation of a trophological chain as the tool of creation of a product with the set properties is developed. The possibility of directed modification of the composition and properties of raw meat by lifelong formation of properties is proved, and also the systematic approach to the analysis of safety and specific characteristics of meat raw materials is used. It is proposed to use a mixture of phosphates as a functional component for the purpose of lifelong modification of poultry meat. Application of results: the scientific concept of lifelong formation of quality of poultry meat with the set structure and functional-technological properties is formulated and realized. The possibility of modification of physicochemical composition is proved.
