Abstract
The subject of the study is the theoretical and methodological provisions and practical foundations for the formation of the foundations of food security. The purpose of the study is to improve the methodological approach to assessing regional food security, which consists in substantiating indicators that will complement the generally recognized system of indicators of the latter, assessing the state of ensuring the consumption of meat and dairy products in the regions of Ukraine in accordance with the recommended standards. Research methodology. To achieve the goal of the study, general scientific and special methods were used: dialectical and logical to generalize the scientific foundations of food security in the context of sustainable development; economic and statistical – for the processing and analysis of statistical data; tabular for visualization and generalization of research results. Research results. The indicators are proposed, with the help of which the assessment of the state of regional food security is carried out. Thus, the study of changes in the consumption sufficiency indicator of a particular type of product made it possible to identify regions where the level of consumption of meat and dairy products did not meet the recommended standards. The analysis of changes in the percentage of consumption of products provided by own (domestic) production (according to the recommended norms) identified regions with insufficient production of meat and dairy products, as well as regions that produce surplus products and are able to meet the needs of vulnerable regions. The substantiation of the directions of development of the meat and dairy industries in the regions, characterizing the state of their food security, identified the regions of Ukraine that need to attract tangible and intangible investments for the development of these industries. Scope of the results. The results are of a scientific and practical nature and can be used by scientists in further research on the state of food security. They can serve as a source of reference information and are used by economists, specialists from food and processing industries, specialists from authorities, scientists, teachers, graduate students and university students.
