Abstract
Subject of research – theoretical and methodological principles of enterprise management using information technology research of consumer demand. Purpose of work – to develop scientific and methodological and practical recommendations for improving the management of enterprises and food industries based on the diagnosis of consumer demand and consumer behavior in the food market using digital Internet technologies. Research methods. General scientific, economic-statistical and mathematical methods are used. In particular, in determining consumer behavior and consumer preferences of certain groups of goods, methods of theoretical generalization and comparison were used; to assess the seasonality of demand - methods of statistical analysis; when forecasting demand in the food market - economic and mathematical methods; for visualization of statistical information - graphic method. Results of the research. Based on the digital Internet technology GoogleTrends, the dynamics and geography of consumer demand in the food market in Ukraine and the world (on the example of the sugar industry) were studied. The seasonality of food demand is assessed and a forecast of consumer demand during the COVID-19 epidemic is developed. The comparison of demand for the main types of food products (milk, meat, bread, flour, sugar) in Ukraine and the world is made. It was found that during the pandemic, consumer preferences for food choices changed, most of which replaced expensive products (milk and meat) with cheaper ones (flour and bread). Scope of results. The obtained results can be used by scientists in further research of consumer demand in the food market in Ukraine and the world, entrepreneurs – to develop business plans and strategic development programs.
